Insanely Chocolatey Fudge Cookies

Hi Bakers, This was the best mistake I’ve ever made…and you need to try it! I set out to recreate a chocolate bakery cookie I had on vacation. While I haven’t quite nailed it yet, this “happy accident” turned out so insanely fudgy soft, and ridiculously chocolaty— I just had to share! Think Oreo Cakesters but WAY more flavorful and utterly addictive.
The best part? These gluten-free cookies can also be dairy-free with a simple swap ( I recommend Miyoko’s plant butter in stick form + non-dairy chocolate chips) Perfect for fellow chocoholics who crave a rich decadent bite!

Insanely Chocolatey Fudge Cookies
Makes 12 large cookies
Ingredients:
- 2 ½ cups powdered sugar
- ⅔ cup + 1 tbsp cocoa powder
- ¼ tsp espresso powder
- Heaping ¼ tsp salt
- 2 large egg whites
- 1 large egg
- 1 tsp vanilla extract
- ¼ cup blanched almond flour
- 1 tbsp butter (or vegan alternative)
- 1 ½ cups semi-sweet & milk chocolate chips
Instructions:
1️⃣ Preheat & Prep:
Preheat your oven to 350°F (175°C) and place the rack in the middle position. Line a baking sheet with parchment paper.
2️⃣ Mix Dry Ingredients:
In a large bowl, whisk together the powdered sugar, cocoa powder, espresso powder, and salt.
3️⃣ Add Wet Ingredients:
Beat in the egg whites, whole egg, and vanilla extract. Keep mixing until the batter becomes thick and glossy, like brownie batter—this should take a few minutes.
4️⃣ Incorporate Final Ingredients:
Mix in the butter and almond flour until just combined. Stir in the chocolate chips.
5️⃣ Portion & Bake:
Scoop 2 ½-tablespoon-sized dough balls onto the baking sheet, spacing them 4 inches apart.
6️⃣ Bake & Cool:
Bake for 10-12 minutes or until the tops are shiny and lightly cracked all over. Let them cool for 5 minutes on the baking sheet before carefully transferring them to a wire rack with a metal spatula.
7️⃣ Storage:
Store in an airtight container at room temp for a day or freeze for a chewy cookie anytime!
