Gluten-Free Texas Sheet Cake

Hi Bakers! This cake is quick and moist and delicious so why haven't you made it yet?? It takes about a fifteen-minutes to bake and you get to frost when it's hot so it's perfect in a pinch. Cocoa powder and coffee give this sweet cake a rich and deep flavor that goes really well with vanilla or coffee ice cream. This bake also travels well and is big enough to feed a crowd. Good news for single folks, this cake can be portioned out and frozen with no ill effects :) When I'm short on time and need a cake this is one of the best and I hope you try it soon! Gluten-Free Texas Sheet cake
It was adapted to gluten-free from the recipe by Great American Recipes. To make this recipe gluten-free, I decreased the amount of butter, added almond flour and applesauce and an extra egg yolk for moisture.
Cocoa mixture
3/4 cup butter
1 cup strong coffee
1/4 cup cocoa powder
Dry ingredients
1 3/4 cups + 2 T of Cup4Cup Multipurpose Gluten-Free Flour
2 cups granulated sugar
1/4 cup blanched almond flour
1 teaspoon sweet rice flour
1/2 teaspoon salt
1/4 teaspoon xanthan gum
Egg mixture
1/2 buttermilk
1/4 cup applesauce, unsweetened
2 large eggs + 1 egg yolk
1 teaspoon baking soda
1 teaspoon vanilla
In a mediums sized bowl, whisk together buttermilk, eggs, yolk, applesauce, baking soda and vanilla and set aside.
Mix together butter, coffee and cocoa powder then microwave until just boiling. Be sure to mix periodically while cooking and make sure it doesn’t burn! Cool the mixture for about 5 minutes before adding it to the dry ingredients.
Whisk together dry ingredients in a large bowl. Add warm cocoa mixture to dry while stirring constantly. Next, stir in egg mixture until just combined. Pour into a greased or parchment lined 11x17.5 " jelly roll pan. Bake for about 15 minutes or until the cake springs back when touched. While the cake is baking prepare frosting.
Frosting
1/2 cup butter
2 tablespoons cocoa powder
1/4 cup milk
Whisk together butter, cocoa powder, and milk and heat to boiling in the microwave. Stir often to distribute heat and watch carefully so it doesn’t burn! Add:
3 1/2 cups powdered sugar
1 teaspoon vanilla extract
Mix well with beaters until smooth. Pour over hot cake and smooth evenly over the top as needed. Add sprinkles or other garnish as desired. Cool and eat. Or just eat, this one is hard to wait to eat! Enjoy! -Carolyn
