Gluten-Free Raspberry Cream Cheese Swirl Brownies

Adapted from the Heritage Cook’s recipe The Best Chewy Brownies in the world (Gluten-Free Option)

Cocoa mixture

10 tablespoons butter

1¼ cups granulated sugar

¾ cup plus 2 tablespoons unsweetened cocoa powder

Dry Ingredients

½ cup minus 1 tablespoon Cup4Cup multipurpose flour  

1 tablespoon tapioca starch aka tapioca flour

¼ teaspoon xanthan gum

¼ teaspoon salt

Egg Mixture

2 large eggs

½ teaspoon vanilla extract

Cream Cheese Swirl Mixture

8 ounces cream cheese, room temperature

1 large egg

¼ cup granulated sugar

¼ teaspoon vanilla

1 cup fresh raspberries

2 tablespoons granulated sugar

chocolate chips for garnish if desired

Preheat oven to 325 degrees. Grease an 8x8” pan or line pan with parchment paper.

In a small saucepan, combine raspberries and sugar and cook until thickened. Set aside.

Melt butter and sugar in the microwave and mix to combine. Add cocoa and stir well. Heat for about 5-10 more seconds but be careful not to let it burn . Let the mixture cool for a few minutes and set it aside until it’s slightly warm before using it.

Add eggs and vanilla to cocoa mixture. Stir for a few minutes until it's well mixed.

Whisk together flour, tapioca flour, xanthan gum, and salt in a bowl. 

Add dry ingredients to the cocoa mixture and stir for two more minutes. The mixture will make a thick batter. Scrape it into the prepared pan and smooth the surface. 

Make cream cheese mixture by blending cream cheese, sugar, egg, and vanilla until just mixed. Drop by large spoonfuls* in an evenly spaced pattern on the top of the brownie batter. Swirl the cream cheese into the brownie with a small knife or chopstick to make a marbleized design. Repeat this process with the raspberry mixture. Sprinkle with chocolate chips if desired.

Bake for about 20-25 minutes or until brownies test done by inserting a toothpick into the center and only moist crumbs remain. Cool, cut, and enjoy!

* If you beat cream cheese mixture it can become runny, it will still work in the recipe. Pour it over the top and swirl as directed the best you can.
