Gluten-Free Honeycrisp Apple Fritters

Fall is in full swing so it's all things apple around here! I went apple picking last week and was inspired to make these Honeycrisp Apple Fritters. They are as easy as pancakes but more fun. With a simple batter that comes together in minutes, these gluten-free treats give all the yum of apple donuts with no rise time! Crisp browned edges slathered with icing and full of fresh apple chunks make every bite is a delight. Drizzle or dip your fritter if you need more icing. Gluten-Free Honeycrisp Apple Fritters

Modified from Preppy Kitchen’s recipe

Dry Ingredients

1 1/4 cups Cup4Cup Multipurpose Flour

1/4 cup blanched almond flour

1 teaspoon sweet rice flour

3 tablespoons granulated sugar

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1/2 teaspoon cinnamon

1/4  teaspoon ground ginger

Wet Ingredients

1/2 cup milk

1/4 cup unsweetened applesauce

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups peeled, chopped and 1/2”dice  Honeycrisp apples

Glaze

2 cups powdered sugar

2-3 tablespoons milk

1/2 teaspoon vanilla extract

Fill a heavy pan with 1” canola or other neutral oil.

Whisk the dry ingredients together in a medium-sized mixing bowl and set aside.

In a large bowl, combine milk, applesauce, eggs and vanilla extract. Add the dry ingredients to the wet and stir gently until almost mixed. Fold in the apples. Heat the oil to about 350F. Spoon the batter into the oil with a #24-sized (about 3-4 tablespoons) scoop. The dough should immediately bubble heavily around the edges. Fry for 2-3 minutes a side until the bottom is deep golden brown. Flip the fritter and cook another 2-3 minutes on the other side. Move hot fritters to a wire rack when they are cooked and fry the remaining dough. In a medium-sized bowl, whisk together the glaze ingredients until smooth. Drizzle or dip the fritters into the glaze and let set for a few minutes before devouring. Fritters are best eaten the day they are made. Enjoy!
