Gluten-Free Golden Sweet Potato Bread

Hi Bakers, This Gluten-Free Golden Sweet Potato Bread is a great recipe you may not have tried yet. If you love pumpkin and other Fall flavors you need to bake this one. Golden sweet potatoes are so much milder than the orange variety and lend a brown sugar/caramel taste to the bread that is much more subtle. The crumb topping is a bit spicy with ginger, cinnamon, and toasted pecans, just like a great sweet potato pie. Gluten-Free Golden Sweet Potato Bread
Dry Ingredients
2¼ cups Cup4Cup Multipurpose Flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon ginger
1 teaspoon sweet rice flour
½ teaspoon salt
Wet Ingredients
½ cup vegetable oil
2 cups. light brown sugar
1 cup cooked and mashed golden sweet potato
2 large eggs
½ cup applesauce, unsweetened
⅛ cup or 2 tablespoons dark molasses
1 teaspoon vanilla extract
Optional Crumble Topping
½ cup Cup4Cup Gluten-free flour
¼ cup oat flour
4 tablespoons butter, softened
½ cup light brown sugar
½ cup pecans, chopped
1 teaspoon ginger
1 teaspoon cinnamon
Mix together all ingredients in a small bowl until it resembles crumbs.
Optional Icing
⅔ cup powdered sugar
~2 tablespoons water
1 tablespoon melted butter
Mix together all ingredients until smooth. Add water or powdered sugar to achieve the desired consistency. I like a thick icing that I can drizzle over the top in lines.
Preheat oven to 350F.
Whisk dry ingredients together in a medium-sized bowl and set aside.
In a large bowl, combine oil and brown sugar. Add in sweet potato and mix well. Add applesauce, molasses, and vanilla and blend until well-mixed. Add dry mix and stir until just combined. Spoon into a greased loaf and smooth out the top. Sprinkle with crumble topping. Bake for about 50 minutes or until a knife into the center comes clean. Cool and drizzle with icing. Enjoy!
