Gluten-Free Crepes
The thinner pancake cousin… Crepes are a yummy breakfast treat that is easy but feels like something special. Make some anytime and have fun filling them with your favorite ingredients. I love mine best with fresh fruit. Are you a crepe fan too?
Gluten-Free Crepes
4 eggs
2 1/2 cups of milk
1 1/2 cups Cup4Cup gluten-free multipurpose flour
3/4 teaspoon salt
4 tablespoons granulated sugar
1 teaspoon vanilla
Mix all ingredients together and keep mixing until the batter is a bit elastic. You can use a blender but I just use a whisk.
Cook in a buttered pan with low sides over medium heat. Spoon out batter and spread thin as it is cooking. You can use a spatula or other tool to thin out the batter in the pan. Turn when the top is set, be careful crepes are thin and tear easily.
Cook about 30 seconds more on the second side. You can cook all your crepes and keep them warm under a tea towel until ready to serve. I like them with fresh sliced fruit and whipped cream. You can also spread jam and fruit or a bit of sprinkle of sugar and lemon juice.
