Gluten Free Chocolate Waffles with Salted Caramel Sauce

Hi Bakers, Some days you just want dessert for breakfast right?? Gluten-Free Chocolate Waffles with salted caramel sauce taste like a breakfast sundae! These are a super fun variation on the usual waffle with a deep, slightly sweet chocolate taste just perfect for rich caramel syrup and whipped cream. My son loves these with just sweet cream which makes them taste a lot like a thick warm chocolate Whoopee pie. Eat it any way you like, but you will want to eat it! This recipe doubles well so it's easy to make more if you are feeding a crowd...or one teenager! Have fun with this one -Carolyn

Gluten Free Chocolate Waffles with Salted Caramel Syrup

Makes 6 waffles

Dry Ingredients

1 cup +2 tablespoons Cup4Cup Multipurpose Flour

2 tablespoons blanched almond flour

1/3 cup cocoa powder

3 tablespoons granulated sugar

1 teaspoon baking powder

1/2 teaspoon sweet rice flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 teaspoon espresso extract

 

Wet Ingredients

3 tablespoons butter, melted

2 tablespoons applesauce, unsweetened

3/4 cup 2% milk

1 large egg

1/2 teaspoon vanilla extract

 

Toppings

fresh whipped cream

salted caramel sauce*

mini chocolate chips

Whisk dry ingredients together in a medium-sized bowl and set aside. 

In a large bowl, whisk together wet ingredients. Stir in the dry ingredients until just mixed. Expect the batter to be thicker than the kind you use to make regular waffles. Scoop into a greased and heated waffle iron and top with desired toppings. I love using fresh whipped cream, salted caramel sauce, and a few mini chips. You can make or buy the caramel sauce, I’ve included the recipe I use below. 

*You can also get a great sauce at Trader Joe’s if you want less work. If it is too thick, feel free to thin it with a small amount of hot water or heat it up a bit to pourable consistency. I made the sauce using the recipe from Sally’s Baking Addiction but I reduced the salt to 1/2 teaspoon.
