Classic Buttermilk Belgian Waffles made gluten-free!

Hi Bakers, Sometimes you need to make it yourself! You can’t get a gluten-free waffle this tasty at The Waffle House! The classic buttermilk waffle is iconic because it’s delicious but most gluten-free recipes fall short of the ideal. Thick and golden brown with lots of space for butter and syrup to pool into is the goal. My gluten-free version tastes 100% better than any restaurant or grocery store frozen waffle you’ve had and you can freeze and toast them too! Gluten-Free Buttermilk Waffles
Makes 6 Belgian-style waffles
Dry
1 1/2 cups Cup4Cup Brand Multipurpose gluten-free flour
1 teaspoon sweet rice flour
1/2 cup blanched almond flour
2 T granulated sugar
1 T baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
Wet
1 1/2 cups buttermilk
2 large eggs
1/3 cup melted butter
2T applesauce, unsweetened
Whisk the dry ingredients together in a medium-sized bowl and set aside
Mix the wet ingredients in a large bowl and then mix wet into the dry. Scoop into the waffle iron and cook according to the iron’s directions. Eat immediately or cool in a rack for eating later. If you want to freeze them to eat later, brown them very lightly so they toast to the correct doneness. Freeze flat and store in a bag. Reheat in the toaster.
