Cheesecake for Two!

Hi Bakers,
Sometimes I just want a little dessert, not usually, but sometimes. Share this fun Cheesecake for two with a friend or make two for yourself to enjoy.
They take five minutes to mix and about 15 to bake. The cheesecake can be sugar-free if you use monk fruit as your sweetener instead of sugar. Flavor these any way you like, but here is what I did. From the basic recipe, I substituted 1/8 cup of lemon juice for cream, omitted the vanilla, and added 1 teaspoon of lemon zest. I made one cheesecake with traditional sour cream topping and the other with blackberry syrup and berries. I liked the blackberry one the best but both were so yummy. Enjoy~Carolyn
Crustless Cheesecake for two
1 8oz block of cream cheese
1/8 -1/4 cup granulated sugar or monk fruit sweetener
1 large egg
1/8 cup cream
1/2 teaspoon vanilla
Pinch of salt
Preheat oven to 350F and put an 8”x8” baking pan filled with 1”-1.5” of water in it on the oven rack. You will be baking the cheesecake ramekins in the water-filled pan so they cook more evenly.
Combine all ingredients together in a small mixing bowl. Make sure you don’t have any lumps :) Divide into two 3.5-inch diameter ramekins and bake for about 15 minutes or until they are almost set in the middle. I use a knife and test them… it should not be totally clean but thickened with a bit of cheesecake batter on it. They cook a bit as they cool. Carefully remove from the water bath after cooking. Let cool at room temp about 20 minutes then cover and set in the fridge to chill for at least 2 hours. Garnish with the desired topping when cool.
-Sour cream topping
Mix 2 tablespoons of sour cream with 1 teaspoon of powdered sugar and mix until smooth. Spread on cooled cheesecake and garnish.
-Blackberry syrup
Cook 2 tablespoons of granulated sugar and 3/4 cup blackberries with 2 tablespoons of lemon juice. Cook until the fruit is soft and the syrup has thickened a bit. Be sure to stir to prevent burning! Cool and spoon on top of the chilled cheesecake and garnish with fresh fruit. Enjoy!
