Bananas Foster inspired my newest take on oatmeal and it’s super quick and easy to make. I browned the bananas, put them on my oatmeal and then covered them in a browned butter caramel with rum extract. Too treaty for breakfast? In my defense, I was going to put sugar and butter on them anyway, so why not make a lusciously rich sauce to drizzle over my bananas and then put it on my breakfast? It makes a breakfast that’s a real treat and gluten-free.
For a phenomenal vegan caramel sauce that's just as tasty as the one with milk, I substituted vegan butter(stick style not tub) and added oat milk instead of dairy in the recipe.
Gluten-Free Bananas Foster Oats
makes 2 servings
Prepare the gluten-free oats how you like them. I used steel-cut oats today but old-fashioned also works. Spoon the cooked oats into a wide bowl.
Slice one large banana into ovals and brown on medium-high heat in a pan with a little butter. Place bananas on top of oats.
In the same pan, brown 2 tablespoons of butter and then add 2 tablespoons of brown sugar. Stir in 2 tablespoons of milk, a pinch of salt, and 1/4 teaspoon of rum or vanilla extract. Cook briefly until thickened. Ladle sauce over the bananas. Top with pecans and mini chocolate chips. Sprinkle with a bit of cinnamon. Serve with a bit of cream or milk. Enjoy!
